Cooking with Coffee x Vegan, Gluten-Free, Mocha Brownies

Mocha Brownies, both Gluten-Free & Vegan! Sounds healthy, TASTES DELICIOUS. Vegan & Gluten-Free typically don’t drive droves of people to the door begging for a taste. But don’t be fooled by the set-up terminology, yes they are Vegan & Gluten-Free but they are also just as tasty as the not Vegan or Gluten-Free brownies don’t the aisle! So rejoice! Delight in deliciousness! We have brownies to bake!

YIELDS: 
1 8x8inch baking pan  Serves: 16 pieces

INGREDIENTS: 
2 cups almond flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon sea salt
¾ cup agave or maple syrup
1 tablespoon vanilla extract
¾  cup coconut oil, melted
¼ cup full fat coconut milk, well-mixed
½ cup brewed coffee, cooled
2 tablespoons flax meal
2 tablespoons chia seeds
½ cup walnuts, chopped
¼  cup cacao nibs


INSTRUCTIONS:

  1. Line bottom of 8×8 inch baking pan with parchment paper. Preheat oven to 350F.
  2. Soak flax meal in coffee.
  3. In a large mixing bowl, whisk all dry ingredients except chia seeds, walnuts and cacao nibs
  4. Mix all wet ingredients
  5. Add wet ingredients and flax meal mixture to dry ingredients and mix well.
  6. Stir in chia seeds and walnuts.
  7. Spread batter in baking pan and sprinkle cacao nibs on top.
  8. Bake for 20 minutes until the top is dry and slightly puffed.


TO SERVE:

When cool, run knife around baking pan to loosen the brownie and cut into small squares. Brownie can be served when it is warm but it would be slightly gooey, which is pretty good that way as well 😉

ADDITIONAL NOTES:
*You can use this recipe to make square brownies if you bake in a square pan. Or you can bake in a cake pan and make mocha chocolate cake! Brownies can be kept in an airtight container in room temperature for 3-4 days, or in the fridge for 7-10 days.
